Healthy Slow Cooker Pulled Pork Tacos

I made up these tacos because first of all I'm in the middle of a sugar-free challenge right now and secondly there was a huge sale on pork shoulder at my local discount grocery store this week. They're also 21 Day Fix friendly and if you serve them on lettuce wraps without yogurt they're paleo-diet friendly (if you decide to allow tomatoes on your paleo diet)! This recipe is ridiculously easy (if you have a crock pot!). I love pulled pork but I know that the BBQ sauce that restaurants use is basically pure sugar. So I designed these tacos without BBQ sauce and you know what, they turned out really well! Just remember to start it in the morning or lunch at the latest.



Take the pork shoulder and cut it into a small enough piece that will fit in your slow cooker. Pour a can of diced tomatoes on top then sprinkle it with either taco seasoning or chili powder. Cut up some garlic and onion and throw that in there too. Cook on high for 8 hours. If you don't have a slow cooker I have done this in the oven on 250C for 8 hours but I would recommend being home while your oven is on. The crock pot, on the other hand, should be okay while you're out of the house. For toppings I use greek yogurt mixed with lemon juice, Tia Maria chili sauce (or any spices you love) and a bit of old cheddar. I like using old cheddar because it has more flavour with less cheese (it's all about moderation).

We're going to be eating pulled pork tacos for days now because one pork shoulder makes a ton of food! At $10 for the whole shoulder pork is also crazy cheap! Don't try this with the wrong type of pork though - I've tried it and it doesn't work! Use pork shoulder or pork butt. The cut should be like a big round or oblong cut of meat and not a steak-like cut of meat. Other than that this is super simple to make - just cook it low and slow. If you're using the 21 Day Fix containers you can use the pork and yogurt as 1 red, and the small tortilla as 1 yellow.

Sugar-free Slow Cooker Pulled Pork Tacos


Ingredients:

  • 1 Pork Shoulder or Pork Butt
  • 2-4 Garlic cloves, minced
  • 2 Tbsp Taco Seasoning or Chili Powder
  • 1/2 cup Onion, chopped
  • 1 Can Tomatoes, chopped or 2 Large Tomatoes, chopped or 1 jar of salsa
  • Greek Yogurt, Tia Maria seasoning, lemon juice, tortillas (I like corn tortillas), old cheddar 
Directions:
  1. Place pork, garlic, seasoning, onion and tomato in slow cooker and cook on high for 8 hours.
  2. Mix yogurt with seasoning (like Tia Maria green chili salt)
  3. Toast the tortillas on a pan
  4. Drain pork and assemble the tacos with yogurt as dressing.
  5. Serve hot!
